Chocolate Mousse

Ingredients

12 oz semisweet chocolate chips

2 1/2 cups whipping cream, divided

1 tsp vanilla extract

1 Tbs rum

Directions

Microwave chocolate and 1/2 cup cream on high for 1 1/2 minutes or until melted, stirring twice. Stir in vanilla and rum, blending well. Cool 5 minutes

Beat 2 cups cream until soft peaks. fold cream into chocolate mixture. Pipe or spoon into serving bowl or dessert dishes. Garnish with whipped cream and grated chocolate.

Chill 2 hours
